Healthy Snack Recipes: Spicy Beef with Chickpeas in Pita Bread


Let’s get a little hot and spicy. There are actually a few selected healthy dish that can be categorized as snacks in the wide range of indian cuisine. With all the spice together with vegetables in a particular dish can make it perfect as a food that helps with digestion because of its high fiber content.

I should say, this dish is indigenous to the western asian region, in countries such as India, Pakistan as well as Arabian countries. To reduce the caloric content as well as the cholesterol level, the minced veal that was originally used is substituted with minced beef instead. You can even replace it with minced chicken if you want but that would subsequently means you would have to reduce the cooking time to avoid overcooking of the chicken.

This dish is suitable to be eaten with brown rice too. It gives the right boost of fiber and protein. Fiber is from the vegetables and pita bread, as well as brown rice if you chose to eat it with this recipe. Serves about four people.

Ingredients

  • 150 gm of cooked chickpeas
  • 250 gm lean meat, minced
  • 4-5 small tomatoes, coarsely chopped
  • 2 medium potatoes, skinned and cubed
  • 1 medium round eggplant, diced
  • 150 gm of unsalted tomato puree
  • 1 medium red onion, chopped
  • 2 clove of garlic, thinly sliced
  • 1 tbsp of extra virgin olive oil
  • 1 tsp paprika powder
  • 1 tsp beef curry powder
  • 1 tsp coriander powder
  • Some salt and pepper
  • Water
  • 2 pieces of pita bread whole wheat; cut in halves

How to make / prepare Spicy Beef with Chickpeas in Pita Bread

  1. Mix together paprika powder, curry powder, coriander powder and some water to turn it into a light paste.
  2. Heat the pan with olive oil and fry the onion and garlic. Use medium heat to avoid over frying.
  3. Pour in the tomato puree and keep on blending and frying until you see the oil rise above the puree mixture.
  4. Put in the cube potatoes and eggplant cubes and blend well. Pour in some water to avoid the mixture getting too thick. Let it simmer for a while with low heat (about a minute). Later, add in the cooked chickpeas and let it boil for a few minutes.
  5. Now add in the minced meat and again, blend all the ingredient well before leaving it for a few minutes to have the meat well cooked.
  6. Add in some salt and pepper for taste. Adjust well to your taste buds.
  7. Lastly, add in the fresh chopped tomatoes. Blend it for the last time.
