Healthy Snack Recipes: Tomato Bruschetta



This is by far, the easiest, nutritious and tasty snack that I’ve ever come across. It’s a great snack for all age, from kids to adults to even those with diabetes, high blood pressure or heart problems. It only takes about 15 minutes to prepare. If you want a more authentic taste, perhaps you should try getting fresh from the orchard sweet, juicy and ripe tomatoes. Yummy!

This recipe serves for three people. It’s rich with Vitamin C, fiber and healthy carbohydrate, with a little dash of good oil. Bruschetta originates from central Italy, dated way back in the 15th century. The word ‘Bruschetta’ itself comes from a Roman verb ‘Bruscare’, meaning ‘to roast over coals’.

Ingredients:

  • 1 large tomato (or 2 medium ones)
  • 2 tbsp extra virgin olive oil
  • 6 slices of wholemeal bread
  • 1 clove of garlic
  • 1 tsp chopped fresh basil / basil seasoning flakes
  • Some salt & pepper

How to make / prepare Tomato Bruschetta

  1. First, cut the tomato into small cubes.
  2. Then, put the tomato pieces, olive oil, some salt and pepper as well as chopped fresh basil in a bowl and mix them well with two spoons. Let it sit for a bit so that the taste will sink in.
  3. If you’ve bought a whole loaf of wholemeal bread, slice the bread thinly and shape it however you want. You may cut it in triangles or square and even in rounds. Toast them for a while until golden brown.
  4. Later, cut the clove of garlic in half and rub the cut side all over one side of the bread.
  5. Now, place a spoonful of the tomato mixture that you’ve prepared before onto the bread and serve. It is best to eat right after it’s done, or while the toast is still mildly hot.
