This recipe serves four. It is a great source of protein and fiber. It’s unique taste lies in between the sweetness of apples, the savory of salmon and horseradish with the aroma of simple herbs.
.
Ingredients:-
- 2 medium red apples
- 2 tbsp French dressing
- ½ bunch of watercress
- 1 medium fillet of smoked salmon
Horseradish dressing:-
- ½ low fat plain yogurt
- 1 tsp lemon juice
- 1 tbsp horseradish sauce
- Some low fat milk
- Salt and pepper
- Some chopped fresh chives for garnishing
.
How to make / prepare Flaked smoked salmon & apple salad
- It is best to leave the leave of the apple’s skin on before cutting the apples into fourths and removing the cores. Slice the apples into a bowl and toss in the French dressing to prevent them turning brown.
- Break the watercress into sprigs and into the bowl of sliced apples.
- Skin the salmon and take out the bones (if any). Later, flake the salmon into fairly large pieces and toss it together with the apple and watercress.
- Now, in order to make the horseradish dressing, whisk all the ingredients listed above together. Add some milk if it’s too thick, and then drizzle over the salmon. Sprinkle the snipped chives over the salmon to serve. Voila! Enjoy your snack J
